Boron-doped diamond (BDD), a conductive diamond with high chemical stability and a wide potential window (the voltage range applicable in sensing), holds significant potential as an electrode for chemical sensors.

We are developing a sensor using this BDD electrode to capture the “fingerprint information” of alcoholic beverages. By detecting the subtle changes in alcoholic beverages caused by fermentation, aging, origin, and temperature, and linking this data with human taste data through machine learning, we can quantify the taste and aroma within a single drop and in just one minute.
